Cheesy Corn & Potato Chowder – Crock Pot

I made this chowder on Saturday while it was snowing at our house. It just seemed like the perfect cold-weather food. I also picked up a couple of sourdough bread rounds and cut out the middle to make them into bowls for the soup. I originally found this recipe in my cookbook, but I tweaked it a little to make it a little thicker, and to be crock pot friendly.

Cheesy Corn & Potato Chowder

1 onion, minced

2 ribs celery, thinly sliced

2 cloves garlic, minced

2 t dried thyme

1 t dried parsley

1 t salt

1/2 t pepper

1/3 c flour

4 c chicken broth

5 potatoes, cubed

1 can corn, drained

2 c milk

1 c (or more) shredded cheddar cheese

Add all  ingredients EXCEPT milk and cheese to your crock pot. Mix to combine. Cook on low 6-7 hours. During the last 30 minutes of cooking, add the milk and cheese. ENJOY!

So easy and delicious. I think it’s even better on the 2nd day.
